Tequila is a clear, golden, or brown in colour spirit, best known for cocktails but can be enjoyed on its own as a sipping drink. It is distilled from the blue agave plant, often in the surrounding area of the city of Tequila in central Mexico. Furthermore, just as champagne can only be produced in the Champagne region of France, Tequila can only be produced in the state of Jalisco, with only a few local exceptions.

The workers in Mexico who harvest the blue agave for production are called jimadores, and have a personal connection to this cultivation, a knowledge that is passed down from generation to generation. From here, fermentation occurs for 1-7 days, depending on the steps and additional ingredients used. The yeast used in this process is often regular old commercial brewers yeast.


Tequila contains more than 300 (!) known compounds. But it’s not any one compound that gives off its distinctive flavours and aromas; this depends largely on the volatility of every ingredient and compound found within.


All of these processes and variations result in four categories of tequila, largely depending on the aging period.

  • Blanco – means “white” or “silver;” aged less than two months in stainless steel or neutral oak barrels
  • Reposado – means “rested;” aged two to twelve months in oak barrels
  • Añejo – means “aged” or “vintage;” aged one to three years in small oak barrels
  • Extra añejo – means “extra/ultra aged;” spends at least three years in oak barrels


In 100% agave tequila, blanco is the bolder of the four types, while reposado and añejo are smoother and less complex.


Here are some cocktails made with tequila for you to enjoy, but feel free to pour a small glass for sipping!




Tequila Sunrise

1½ oz tequila

3 oz orange juice

½ oz grenadine

Orange slice, to garnish

Garnish: Maraschino cherry


1. Pour tequila and orange juice into a tall glass filled with ice cubes and stir to combine.

2. Tilt the glass and pour the grenadine slowly into the drink. Let the grenadine sink to the bottom of the glass for a sunrise effect.

3. Garnish with orange and cherry.

Salt to rim your glass


1½ oz tequila, 100% agave

1 oz freshly squeezed lime juice 

½ oz Triple Sec 


1. Moisten the rim of your glass with a slice of lime and dip in the salt. 

2. Fill your glass with ice, add tequila, lime juice and Triple Sec. 

3. Stir a few times until chilled.

Coarse salt, for optional rim

2 oz blanco or reposado tequila

1/4 to 1/2 oz freshly squeezed lime juice, to taste

4 oz grapefruit soda

1. If desired, rim a collins glass with salt. Begin by wetting the rim with a lime wedge, then roll it in a small dish of salt.

2. Fill the glass with ice, add tequila and lime juice.

3. Fill glass with ice and top it off with grapefruit soda.

2 oz blanco tequila

1 oz coffee liqueur

1. Pour the tequila into an old-fashioned glass with ice cubes.

2. Add the coffee liqueur, and swirl the glass gently a few times to lightly mix the ingredients.

Blue Envy

1 1/2 oz blanco tequila

1 oz? blue curaçao

1/2 oz pineapple juice

Maraschino cherry

1. Fill a cocktail shaker with ice cubes, tequila, blue curaçao, and pineapple juice, and shake well.

2. Strain into a chilled cocktail glass over fresh ice (optional).

3. Garnish with a maraschino cherry.

Añejo Old Fashioned

1/4 oz agave nectar

1 dash Angostura bitters

3 oz añejo tequila

Orange peel

Garnish: Brandied cherry


1. In a mixing glass, lightly muddle the agave nectar, bitters and orange peel.

2. Add the tequila, then fill with ice and stir until well-chilled.

3. Strain into an Old Fashioned glass over fresh ice, and garnish with a brandied cherry.

Bloody Maria

2 oz tequila

1 tsp horseradish

1 tsp Dijon mustard, optional

3 dashes Tabasco sauce, or other hot sauce

3 dashes Worcestershire sauce

3 dashes celery salt

3 dashes ground black pepper

1 dash lime juice

4-6 oz tomato juice, to taste

Garnish: Lemon and/or lime wedge, celery stalk


1. In a highball glass, add all ingredients minus tomato juice. Stir well to combine.

2. Add tomato juice.

3. Mix well by rolling back and forth from one glass to another (or stir). Fill glass with ice and stir again.

4. Garnish with a lemon and/or lime wedge and celery stalk.
